Saba

Saba is a grape syrup that has been used since time immemorial to give taste and flavour to foods and drinks; it was used in the recipes for many cakes and desserts in the country tradition because it was cheaper than sugar and honey and easily made during the grape harvest.

Today it is used in a very wide range of dishes: as a condiment for vegetables and legumes and in fruit preserves and pickles.
